Cheesecake & Chocolate-Raspberry Verrine

Raspberry and chia jam

  • 80 ml (⅓ cup) raspberries
  • 10 ml (2 teaspoons) maple syrup
  • 10 ml (2 teaspoons) lemon juice
  • 20 ml (4 teaspoons) chia seeds

Cheese mixture

  • 125 ml (½ cup) cream cheese
  • 125 ml (½ cup) cottage cheese
  • Juice and zest of half a lemon
  • 15 ml (1 tablespoon) coconut oil
  • 15 ml (1 tablespoon) brown sugar
  • 125 ml (½ cup) VERIFRUIT chocolate raspberries

  1. Place raspberries, maple syrup and lemon juice in a small container.
  2. Use a blending attachment to puree.
  3. Add the chia seeds, mix with a fork and refrigerate for a minimum of 60 minutes.
  4. Meanwhile, in a separate container, place all the ingredients for the cheese mixture. Use the blending attachment to mix the ingredients. Set aside.
  5. Divide the raspberry jam between two containers, followed by the cheese mixture.
  6. Garnish with Vérifruit chocolate raspberries.
