Fruit salad

  • 1 cup (250 ml) fresh raspberries
  • 1 cup (250 ml) fresh mango, diced
  • 1 cup (250 ml) sliced strawberries
  • Juice of 2 mandarins
  • 1 cup (250 ml) Verifruit chocolate-covered raspberries

Whipped Cottage Cheese

  • 1 cup (250 ml) 1% cottage cheese
  • 1 tbsp (15 ml) maple syrup
  • 2 tbsp (30 ml) freshly squeezed mandarin juice
  • 2 tsp (10 ml) mandarin zest

  1. In a large bowl, combine the fresh fruits. Drizzle with mandarin juice and set aside.
  2. In a blender, add the cottage cheese, maple syrup, and mandarin juice. Blend until smooth. Stir in the mandarin zest gently with a spoon.
  3. To serve, divide the fruit salad into 4 bowls, top with Verifruit chocolate-covered raspberries, and add a scoop of whipped cottage cheese.
